Broiled BBQ Pork Chops

Ingredients

  • 1 cup instant brown rice, uncooked
  • 1 cup frozen mixed vegetable
  • 2-3 center-cut pork chops, 1-1/4 inches thick
  • 1 teaspoon garlic powder
  • 1 teaspoon Dijon mustard
  • 1 tablespoon brown sugar
  • 1/4 cup bottled barbecue sauce
  • 1 cup applesauce

What to do

  • If you have time, place the pork chops in a zip lock back and mix in some BBQ sauce (not included in the 1/4 above).  Stick this in the fridge until you are ready to cook (overnight is best)
  • turn on broiler
  • Mix the BBQ sauce, garlic powder, mustard, and sugar together in a small bowl
  • trim fat off chops
  • coat both sides and sides of the pork chops with the sauce, but leave 1/4 of it left over
  • place pork chops on the broiler pan, place pan 4-5 inches from the heat source
  • cook for 8-10 mins
  • following the instructions on the box, start cooking the rice
  • halfway through cooking, add the veggies to the rice
  • flip the chops and put the rest of the sauce on top
  • cook for 8-10 more mins
  • serve pork chops with rice/veggies and applesauce
